For most history, people's biggest problem has been getting enough to eat. In the developed world too many people eat too much. Or rather, they do not balance what they eat with how much energy they use.
Energy is usually measure in calories. Technically is the amount of heat required to raise the temperature of a gram of water one degree Celsius. The energy you need comes from two places : the food that you eat and the energy stored as fat in your body.
Generally, an adult man eats about 2,500 calories of food a day. To be healthy, this should include about 83 grams of fat, 60 grams of protein, and 25 grams of fiber, as well as various minerals and vitamins.
